Thank You Mr. Wynn

So excited that Steve Wynn (mega casino entrepreneur) has gone vegan!  He has decreed that every restaurant on his properties must have vegan options.  My husband and I stayed at the Las Vegas Encore for just this reason.  We won free buffets!  The buffet at The Wynn had 28 vegan options and they were delicious.  I tried all 28.  Had to.  It was research.

The next morning we had breakfast at the Terrace Point Café.  I chose a Seasonal Fruit Plate from the separate vegan menu.  And, what a plate!  Along with the vegan banana bread, were mango, kiwi, strawberries, melons, sugar cane, pineapple, blueberries, papaya, and rambutan.

I have never had rambutan but was told it is related to lychee fruit.  It was delicious. 

We went back to the same café before leaving town.  I had to have the Asian Pockets and Soba Seaweed Salad.  I forgot to take a picture.  It was so pretty and I dug right in.  They were both tasty.  I must go back so I can take pictures. ; )

We also split the Vegan Vegetable Sandwich at Zoozacrackers.  I can’t remember if this was in The Wynn or Encore.  It was big and fabulous.  I didn’t see it on the wall menu, but there it was in the deli case... and it was beautiful.  Yes, I like food.  So much that I forgot to take a picture again.
